Mapo Doufu experiment

One thing we want to bring home from China is the cooking - the food there is truly delicious everywhere. Especially in Sichuan province, which is renowned for its food. Our favourite dish was Mapo Doufu, a very well-known Sichuanese dish of creamy beancurd in spicy sauce. In fact, it is so famous that you can find it on the menu almost everywhere in China - but it did taste best in Chengdu (capital of Sichuan).

Naturally, we want to try making this ourselves, so yesterday we conducted our first experiment. There are a million recipes for this dish, and no two are the same. Even in China, the Mapo Doufu tasted different in every restaurant we tried. So we picked a recipe from the internet that at least had the token ingredients, and tried it out. The result was ok, but different from the versions we had in China. We'll make some adjustments and try again, until we get a satisfactory taste. But it will probably never taste as good as it did in Chengdu... :-(
